Oven Roasted Rock Cornish Game Hens
Cornish game hens are a delicate,
richly flavorful little bird, typically only about one and a half to two pounds
each. They make for a beautifully rustic
meal that is not only an utter treat to eat but quite fun to prepare. This
recipe is from the archival of our own Pam Bacigalupi.

Serves 6
3 game hens, halved
2 tablespoons freshly squeezed lemon juice
2 tablespoons chopped fresh oregano
2 cloves garlic minced
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
To prepare game hens, place them with the lemon juice, oregano, garlic, salt
and pepper in a large dish and turn to coat all over. Cover and refrigerate for
at least 3 hours or as long as overnight. Remove from the refrigerator 30
minutes before cooking.
To cook, preheat oven to 425 degrees. Set the game hen halves, without
crowding, on tone or two baking sheets. Bake, turning once, until they are
golden brown and no longer pink – about 30 minutes. Remove from the oven and
let rest for 10 to 15 minutes.
